I've never made &lt;a href=http://en.wikipedia.org/wiki/Simnel_cake&gt;Simnel cake&lt;/a&gt; before because it just looks too rich and I only want to attempt to stuff myself with marizpan-y fruit fake at Christmas. These muffins are a great take on the traditional cake. They have a little bit of marzipan on the inside and make these a real treat. &lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src=http://farm4.static.flickr.com/3389/3435573280_ff7101489f.jpg&gt;&lt;br /&gt;&lt;br /&gt;&lt;big&gt;&lt;b&gt;Simnel Muffins&lt;/b&gt;&lt;/big&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;250g/9oz mixed dried fruit&lt;br /&gt;Grated zest and juice of one medium orange&lt;br /&gt;175g/6oz butter, softened&lt;br /&gt;175g/6oz golden caster sugar (&lt;i&gt;In the US, this would be golden superfine sugar or just ordinary fine sugar would do. The only difference this sugar makes is a slightly darker colour, I think.&lt;/i&gt;)&lt;br /&gt;3 medium eggs, beaten&lt;br /&gt;300g/10oz self-raising flour&lt;br /&gt;1 tsp mixed spice&lt;br /&gt;½ tsp freshly grated nutmeg&lt;br /&gt;5 tbsp milk&lt;br /&gt;174g/6oz marzipan&lt;br /&gt;&lt;br /&gt;&lt;b&gt;For the icing&lt;/b&gt;&lt;br /&gt;200g/8oz icing sugar&lt;br /&gt;2 tbsp orange juice for mixing&lt;br /&gt;Mini eggs or sugar eggs&lt;br /&gt;&lt;br /&gt;&lt;b&gt;How-to&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1. Tip the fruit into a bowl, add the zest and juice and microwave on medium for 2 minutes (or leave to soak for 1 hour). Line 12 deep muffin tins with paper muffin cases. Preheat the oven to 180C/Gas 4/150F.&lt;br /&gt;&lt;br /&gt;2. Beat together the butter and sugar until light and fluffy.&lt;br /&gt;&lt;br /&gt;3. Beat in the eggs, flour, spices and milk. Sir the fruit in well.&lt;br /&gt;&lt;br /&gt;4. Half fill the muffin cases with the mixture. Divide the marzipan into 12 equal pieces, roll into balls, then flatten with your thumb. Put one into each muffin case and spoon the rest of the mixture over.&lt;br /&gt;&lt;br /&gt;5. Bake for 30 minutes, until risen, golden and firm to the touch. Leave the muffins to cool.&lt;br /&gt;&lt;br /&gt;6. Beat together the icing sugar and orange juice to make the icing thick enough to coat the back of a spoon. You may need to use more orange juice than the recipe asks for, I certainly did. The trick is not to make it overly runny, it just wants to be able to drop from the spoon onto your muffin. I seem to be on a roll! &lt;br /&gt;&lt;br /&gt;Anyone who has tasted my brownies has hailed me Brownie Queen. My secret is Nigel Slater's Very Good Brownie Recipe. It is by far the best brownie recipe I have ever made and tasted. The result is crumbly, fudgy, rich and ultra-moreish brownie. I don't bother trying other recipes since finding this, I just don't think it gets better than this.&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src=http://farm4.static.flickr.com/3427/3385130481_60da1bff52.jpg&gt;&lt;br /&gt;&lt;br /&gt;&lt;big&gt;&lt;b&gt;Nigel Slater's Very Good Brownies&lt;/b&gt;&lt;/big&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;300g/1 ⅓ cups golden caster sugar&lt;br /&gt;250g/9oz unsalted butter&lt;br /&gt;250g/9oz chocolate (at least 70% cocoa solids)&lt;br /&gt;3 large eggs plus 1 extra yolk&lt;br /&gt;60g/⅓ cup cocoa powder&lt;br /&gt;60g/⅓ cup plain flour&lt;br /&gt;½ tsp baking powder&lt;br /&gt;Pinch of salt&lt;br /&gt;&lt;br /&gt;&lt;b&gt;How-to&lt;/b&gt;&lt;br /&gt;1. Pre-heat the oven to 180C/355F. Grease and line a 9 x 9" baking tray with baking parchment.&lt;br /&gt;&lt;br /&gt;2. Chop 50g of the chocolate into small, gravel-sized chunks and set aside. Break the remaining 200g of chocolate into pieces and put rest in a bowl suspended over a pan of simmering water. As soon as the chocolate as melted, remove it from the heat. &lt;br /&gt;&lt;br /&gt;3. Cream the butter and sugar together until pale and fluffy. It's best to use a food mixer/hand whisk for this.&lt;br /&gt;&lt;br /&gt;4. In a small bowl or cup, lightly beat together the eggs then slowly add to the butter and sugar, with the food mixer still running.&lt;br /&gt;&lt;br /&gt;5. Sift together the flour, cocoa and baking powder and mix in a pinch of salt. Remove the bowl from the mixer to the work surface, then mix in the melted and the chopped chocolate with a large metal spoon. Lastly, fold in the flour and cocoa, gently and firmly, without knocking any of the air out. &lt;br /&gt;&lt;br /&gt;6. Scrape the mixture into the prepared cake tin, smooth the top and bake for 30 minutes. The top will have risen slightly and the cake will appear slightly softer in the middle than around the edges. Pierce the centre of the cake with a toothpick - it should come out sticky, but not with lots of raw mixture attached to it. The middle should be soft but not uncooked and will solidify when cooled. &lt;br /&gt;&lt;br /&gt;7. At this stage, take the tray out of the oven. Cool for 30 minutes in the tin before taking out to cool on a wire rack. I have to say I'm a little disappointed with the results. I think the base could be sweeter or more chocolatey or maybe it should have asked for more chocolate so you get more in a bite. If I try this recipe again, I will probably make adjustments to it. The original recipe is below.&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src=http://farm4.static.flickr.com/3459/3365241175_9a437f7ea9.jpg&gt;&lt;br /&gt;&lt;br /&gt;&lt;big&gt;&lt;b&gt;Triple Chocolate Chunk Muffins&lt;/b&gt;&lt;/big&gt;&lt;br /&gt;Makes 11 muffins&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;250g/9oz plain flour&lt;br /&gt;25g/1oz cocoa powder&lt;br /&gt;2 tsp baking powder&lt;br /&gt;½ tsp bicarbonate of soda&lt;br /&gt;85g/3oz each dark and white chocolate, broken into chunks&lt;br /&gt;100g/4oz milk chocolate, broken into chunks&lt;br /&gt;2 eggs, beaten&lt;br /&gt;284ml carton soured cream - (&lt;i&gt;In reality, soured cream comes in 300ml tubs. Take a tbsp of it out and you should have roughly 285ml left.&lt;/i&gt;)&lt;br /&gt;85g/3oz butter, melted&lt;br /&gt;&lt;br /&gt;&lt;b&gt;How-to&lt;/b&gt;&lt;br /&gt;1. Preheat the oven to 200C/Gas 6/fan oven 190C. Butter 11 holes of a muffin tin. (&lt;i&gt;Or make life easier for yourself and use muffin cases.&lt;/i&gt;)&lt;br /&gt;&lt;br /&gt;2. In a large bowl, combine the flour, cocoa, baking powder, bicarbonate of soda and chocolate, In a separate bowl, mix together the eggs, soured cream, sugar and melted butter.&lt;br /&gt;&lt;br /&gt;3. Add the soured cream mixture to the flour mixture and sitr until just combined and the mixture is fairly stiff, but don't overmix. Spoon the mixture into the holes to generously fill.&lt;br /&gt;&lt;br /&gt;4. Bake for 20 minutes until well risen. Leave in the tins for about 15 minutes as the mixture is quite tender. Remove from the tins. The recipe below is from BBC Goodfood's 101 Cakes &amp; Bakes which is a great little recipe book that cost me just under £4. You can expect more recipes from this book in the future seeing as I want to make nearly everything in it. Anyway, they call this 'Banana Teabread,' but I'd go for Banana and Walnut Loaf, myself. &lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;br /&gt;&lt;img src=http://farm4.static.flickr.com/3414/3345023638_51bc4d3568.jpg&gt;&lt;br /&gt;&lt;br /&gt;&lt;big&gt;&lt;b&gt;Banana and Walnut Loaf&lt;/b&gt;&lt;/big&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;175g/6oz plain wholemeal flour&lt;br /&gt;50g/2oz medium oatmeal - &lt;i&gt;Sainsbury's did not have this, I just used Scottish porridge oats instead. Works fine.&lt;/i&gt;&lt;br /&gt;100g/4oz butter, softened&lt;br /&gt;100g/4oz dark muscovado sugar&lt;br /&gt;2 tsp baking powder&lt;br /&gt;¼ tsp ground cinnamon&lt;br /&gt;2 eggs, beaten&lt;br /&gt;3-4 ripe bananas, about 350g/12oz, peeled and mashed&lt;br /&gt;100g/4oz walnuts, roughly chopped&lt;br /&gt;&lt;br /&gt;&lt;b&gt;How-to&lt;/b&gt;&lt;br /&gt;1. Preheat the oven to 180C/Gas 4/fan over 160C. Butter and line the base of a 1kg/2lb loaf tin with baking paper.&lt;br /&gt;&lt;br /&gt;2. Put the wholemeal flour, oatmeal, butter, sugar, baking poweder, cinnamon and eggs into a large bowl and using an electric hand whisk, beat together until evenly mixed. Stir in the bananas and walnuts, taking care not to overmix.&lt;br /&gt;&lt;br /&gt;3. Spoon the mixture into the prepared tin and bake for 1¼ hours or until a skewer inserted comes out clean (cover the cake with foil halfway through cooking to prevent the top from overbrowning). Allow the cake to cool in the tin for 5 minutes, then carefully turn out, peel off the lining paper and cool completely on a wire rack.&lt;br /&gt;&lt;br /&gt;For 10 servings, each serving is (allegedly) 309 kcalories. (I got 11 slices out of this, so it depends how much you want I guess.) I've been meaning to do so for a while. The end result is a little piece of chocolate heaven! Recipe is below. &lt;br /&gt;&lt;br /&gt;&lt;img src=http://farm4.static.flickr.com/3398/3311714383_93ab46bf6f_o.jpg&gt;&lt;br /&gt;&lt;b&gt;Hazelnut Chocolate Orange Cupcakes&lt;/b&gt;&lt;br /&gt;Makes 12 standard cupcakes &lt;br /&gt;&lt;div align="center"&gt;&lt;table border="0" cellpadding="0" cellspacing ="0" align="center"&gt;&lt;tr&gt;&lt;td&gt;- 110g unsalted butter &lt;br /&gt;- 125g dark chocolate (at least 60% cocoa solids), broken into small squares &lt;br /&gt;- 135g caster sugar &lt;br /&gt;- 2 medium eggs, lightly beaten &lt;br /&gt;- ¼ tsp vanilla extract &lt;br /&gt;- 1 heaped tbsp sour cream &lt;br /&gt;&lt;/td&gt;&lt;br /&gt;&lt;td&gt;- 25g chopped roasted hazelnuts &lt;br /&gt;- Finely grated zest of 1 orange &lt;br /&gt;- 110g self-raising flour, sifted &lt;br /&gt;- 1 tbsp cocoa powder, sifted &lt;br /&gt;- Chocolate butter icing or dark-chocolate glaze (ingredients and instructions below)&lt;br /&gt;&lt;/td&gt;&lt;/tr&gt;&lt;/table&gt;&lt;/div&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;- Preheat the oven to 180C/350F/Gas Mark 4. Line a muffin tin with foil paper cases. &lt;br /&gt;- Put the butter in a small saucepan and heat gently until just melted. Remove from the hob and stand for 2 minutes, then throw in the chocolate and leave to stand for a further 2 minutes. Stir until smooth, then add the sugar and mix in well. &lt;br /&gt;- Beat in the eggs a quarter at a time, making sure each lot is well mixed in before adding the next. &lt;br /&gt;- Beat in the vanilla and sour cream, nuts and orange zest, then fold in the flour and cocoa, before beating for a couple of seconds to combine. &lt;br /&gt;- Divide between the cases and bake for 15-20 minutes — you want them to be only just set on top. Remove and leave to cool. &lt;br /&gt;- Pile with chocolate butter icing, or glaze with a flat pool of chocolate icing: slice the top from the cake so it is below the level of the case, then pour the icing on top. &lt;br /&gt;- Decorate the centre with a whole roasted hazelnut, a gold star, an M&amp;M or Minstrel, or a piece of candied orange, or sprinkle over chopped hazelnuts. Covering M&amp;Ms with edible gold leaf will also look pretty. &lt;br /&gt;&lt;br /&gt;&lt;b&gt;For the chocolate butter icing (which I used):&lt;/b&gt;&lt;br /&gt;Melt 75g dark chocolate and leave to cool to room temperature.&lt;br /&gt;Beat 150g unsalted butter until creamy, then beat in 300g sifted icing sugar sugar. &lt;br /&gt;Vigorously mix in the chocolate, then add 1/2 tsp vanilla, 1 tbsp milk and beat until smooth. Spread onto cakes with a knife or pipe with a star nozzle.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;For the chocolate glaze:&lt;/b&gt;&lt;br /&gt;Melt 100g unsalted butter over a low heat until just melted. Remove from the heat and leave to cool for 2 minutes. Add 150g dark chocolate, broken into small squares or pieces. Leave to stand for another 2 minutes, then stir until smooth. Beat in 1 tbsp golden syrup, then either pour while still molten or leave to cool and spread over the top. &lt;br /&gt;&lt;br /&gt;&lt;i&gt;My notes:&lt;br /&gt;You could replace the hazelnuts for another of your choice (I imagine almonds would be nice) or you can take them out completely. I didn't use a muffin tin, I used a standard cupcake tray with standard baking cases. (I wanted to make CUPCAKES not muffins.) I also found the cooking time to be a bit too long. &lt;br /&gt;&lt;br /&gt;These cupcakes don't rise much so don't be afraid to fill the cases. For reference, the chocolate I used for both the cupcakes and the icing was Green &amp; Black's 72% cook's chocolate. I want all of these dresses in my wardrobe, stat. (If only, eh?)&lt;br /&gt;&lt;br /&gt;&lt;img src=http://farm4.static.flickr.com/3518/3306915430_bf1d042225_o.jpg&gt;&lt;br /&gt;&lt;br /&gt;I'm a big fan of Luella and as usual she showed some pieces I would love to wear (and kill to have). Totally unimpressed by her having Pixie Geldof walk the runway for her though, it didn't look right at all. &lt;br /&gt;&lt;br /&gt;&lt;img src=http://farm4.static.flickr.com/3592/3307014418_94a53c34dc_o.jpg&gt;&lt;br /&gt;&lt;br /&gt;A final favourite was Erdem's show. Lovely dresses with great shapes, really cool boots and opaque black tights. Perfect clothing for autumn. Great styling too.&lt;br /&gt;&lt;br /&gt;A mention also has to go to &lt;a href=http://www.londonfashionweek.co.uk/designers_details.asp?DesignerID=1164&gt;noir / bllack noir&lt;/a&gt;.
